Italian coffee-flavored dessert
Heat-resistant bowl (for bain marie) · Small pot for boiling water · Whisk or hand mixer · 9x13 inch dish or similar · Fine mesh sieve (for cocoa) · Grater (if using chocolate)
Prepare the coffee and add rum if using. Let it cool a bit while we prepare the cream.

Separate the yolks. You can discard the whites or keep them for making meringue later.

Put the sugar and yolks in a heat-resistant bowl we can use for bain marie.

Put boiling water in a small pot over very low heat. Place the bowl with sugar and yolks over it and start mixing. Let me know when you've started.
Continue to mix constantly. Mix for about 3-4 minutes until thick and glossy, then remove from heat and keep mixing for another 2 minutes to cool it.
In 3 batches, fold in the mascarpone with a whisk until the mixture is smooth with no lumps.

Dip the ladyfingers for one second in the coffee and arrange them in the dish. The video runs in real time, so you can follow along.

Pour some of the mixture over the ladyfingers. If using chocolate, grate some above it.

Repeat the process with 1 or 2 more layers depending on your dish. Don't put chocolate on the top layer. Cover and refrigerate for at least 4 hours - overnight is even better.
Right before serving, sift cocoa powder generously over the top.

Use a large spoon to gently take out a beautiful tiramisu. If the cocoa was absorbed, dust a bit more.
